Breville has launched the Joule Turbo Sous Vide which was designed to cook meals in half the time of traditional sous vide cooking. The product is a combined innovation between Breville’s product design, ChefSteps’ software and James Beard award-winning recipe content.
Breville’s first hardware evolution to the Joule Sous Vide since 2015, the Joule Turbo technology allows the immersion circulator to cook foods more quickly. Douglas Baldwin, Ph.D., Breville’s senior mathematician and food expert and his team used the same type of mathematics used to track rockets in space and applied them to sous vide to generate accurate and faster results for home cooks.
“Since day one, our mission has always been to help passionate cooks be more creative and confident in the kitchen and part of that is making sous vide an approachable method for cooks of all levels,” said ChefSteps and Joule co-founder Grant Crilly. “The new Joule Turbo Sous Vide answers some struggles we’ve heard in the community for years. Consumers can use the Joule app for step-by-step video guides and access to Autopilot recipes via their phones and tablets. The recipes are broken down with video visuals that guide users on how to prep, season and finish dishes with settings tailored to the product and each ingredient. Users will also be able to set customized preferences for preferred cook and temperature using the company’s “Visual Doneness” to select and see their desired cooking results. The “Primetime” function tells the user how long foods can be held at the optimal temperature to maintain ideal doneness while never overcooking the protein. Joule Turbo Sous Vide users will have access to over 140 tailored recipes developed by the chefs in Breville’s test kitchen.
